Broccoli is a superfood and the best part about eating it is that it’s super cheap to make and can be made in small batches at home.
Here’s how to slice it up in this delicious salad.
Ingredients 2 large heads of broccoli, peeled and chopped 1 can of diced tomatoes 2 tablespoons of olive oil 1/4 teaspoon of sea salt 1/2 teaspoon of pepper 3 cloves of garlic, minced 1/3 cup of chopped fresh parsley (or 1/8 teaspoon of fresh basil) 1 cup of cooked spinach, washed and chopped (1 cup of whole wheat pasta or bread crumbs can be substituted) 1/6 cup of diced onion, chopped (or 2 teaspoons of dried) 1 teaspoon of dried thyme leaves (or a dash of thyme) 1 tablespoon of fresh parsnip, finely chopped (optional) Directions Wash and peel the broccoli.
Add all the ingredients to a food processor and pulse until well combined.
Add the pasta and pulse again until the mixture resembles coarse flour.
Taste and add more salt if necessary.
Transfer the mixture to a bowl.
Add spinach and toss to combine.
Pour into bowls and garnish with a couple slices of bread crumb.
Serve hot or cold.
